I used the search feature, I couldn't find the answer to my very simple question.

Can I use my Macbook to download the latest Asuswrt-Merlin firmware and then upload to the my router or do I have to use a windows based pc?

Firmware updates are done through any web browser, so it doesn't matter what operating system you are using.
 
You can upload firmware wirelessly.
 
It's recommended to use an ethernet connection. Except for when I took my RT-N66U out of the box and was configuring it and updating the firmware, that was the only time I've had an ethernet connection to it.
