Wondering if it is possible to have a 3rd party wireless modem, with 2 AC68U connecting to this (1st in repeater mode) and using aimesh?

No, AiMesh is a proprietary Asus technology. Every nodes have to be in AiMesh mode.

If you are describing a cellular modem connected to a 68U via USB, then that main ASUS router would need to be configured in (AiMesh) Router Mode and could serve as an AiMesh parent router. The other 68U would be configured as an AiMesh node or as an Access Point.
