    Cat 5E is rated only for 1GBps, you need Cat 6 (or 6A). FWIW, the days of overriding negotiated ether speeds is long over - the old 10/100 issues are gone. The negotiation protocols are much more robust and if it says you can only get 1Gbps, then that's all your cable can do.
