As for the routers, yes we plan on having two routers at both points of origin from Charter...then switches cascaded from there. The personal routers within the residence should would take care of individual device addressing per residence then and our routers...

As for the Cat6 cabeling, buy it in bulk yourself from Amazon (500 or 100ft spools)...you'll save a ton. Ask your contractor what the cost is for the cable upfront, and then see what you can get it for. That way you'll know he took that cost off your bill...
If all your PC's are doing is accessing the internet, then I'd just stay with the hookup you have. Your ISP is giving you 12Mbps, and your routing/switching equipment can handle 100Mbps...hence you'd see no benefit moving to gigabit equipment.
