    Can interference suddenly knock a majority of 2.4ghz devices offline for a few seconds?

    Hello Binary.. I have over 20+ years experience troubleshooting and implementing Wifi. From what you are describing I would look into possible issues with the 2.4 radio on your access point and or router. You can also try to get a laptop on the same SSID and run a continuous ping to the laptop...
