Surely you have only had a stable connection for 24hrs not 64 days as you are rebooting the unit at 03:00 every morning (not a bad idea if the firmware is buggy)?
I have them as AiMesh nodes and they are working fine. Fifty odd devices connected including CCTV cameras and Smart Switches. Sonos system connected. The GTAX11000 is doing the work the XT8s are just nodes.
My configuration has changed. I have GT-AX11000 as main unit running Merlin's firmware and the two XT8s as Nodes running the Merlin Fork. Looking at the XT8 forks SMB settings I believe that set to SMB1 the index would work ok as it does on the GT-AX11000 the implementation looks identical...

Sure enough after purchasing a GT-AX11000 and trying to index the library it failed. Uploaded Merlin's firmware and hey presto it indexed ok. What is the magic difference between ASUS and Merlin's SMB1 implementation?
Not had any issues with 5ghz on my AX11000 with Merlin Firmware. I am using two XT8s in AiMesh also without issue. The only bug I can see is WiFi Site Survey is not working - only showing the routers channel.
