AiMesh AX88U & AC66U-B1 packet loss, high RTT and jitter

I'm running an AX88U + AC66U-B1 AiMesh combo. The AC66U is in my room with a 1G ethernet backhaul, I mainly use an MBA 2020 in the room and I've been noticing some issues with the 66U which don't seem to be there on the 88U in the living room.

Typical conditions on AX88U:
  • RTT: 2.8-3.5 ms
  • Jitter: 0.5 ms
  • Packet loss: 0%
  • No significant bufferbloat
  • 5G | -60dbm | Tried various channels, same stats hold up across all channels.
  • Area not saturated with APs
  • Device: MBA 2020
Typical conditions on AC66U:
  • RTT: 3.5-4.0 ms
  • Jitter: 1-1.5 ms
  • Packet loss: 0%
  • No significant bufferbloat
  • 5G | -35dbm | Lower RTT on C36 compared to rest of channels
  • Area not saturated with APs
  • Device: MBA 2020

On paper, the 66U looks fine. Except it's not. I wasn't able to replicate it for this post, but I've seen insane RTT values –– 40+ ms –– along with packet loss and jitter on the 66U. I guess my question is two-fold: what settings are capable of causing such a spike, and more generally, what should I mess around with to get a more stable and lower latency connection.
