I have a RT-AC68R and a RT-AC66R: which would serve better as a wireless repeater and which would serve better as a wireless bridge for a DVR and PS3? The primary router is a RT-AC87R.

Either one, as ps3 and DVR can't and won't use full bandwidth of WiFi.

You should worry more about double Nat with ps3.

I have a similar setup, instead I have;

Modem > Bridge Mode > AC68U > Media Bridge > AC66U > AP > N56U
