I s there a more detailed GUI interface or way to get to advanced settings for this device?

The Quick Start mentions a transmit power option and the like but I cannot find it anywhere with the latest .0.7 firmware.

Where did you read that? I didn't see anything in the quick start guide.
After Initial setup, you access the device through http://www.asusnetwork.net/
That's the only GUI that I know of unless there is custom firmware I'm not aware of.
The latest firmware should be 1.0.1.7d.

I've combed through the pages a good bit and haven't seen any transmit power options.

The current firmware on the EA-N66 is lacking. I used one for several weeks during August and September and ended up returning it and getting another RT-N56U to use as an AP instead. It has none of the issues the EA-N66 had and with Padavan's Custom Firmware, it's much nicer to deal with than the EA-N66.
Plus I can still get great coverage and speeds over WiFi.
