Can I use a crossover cable to connect my modem to a WiFi Extender that's in AP mode...to try and make it behave as if it were a router?

Yes... you can try. However, you can only make a router configured as a router behave as a router. The choice of cabling won't change this.

Your Access Point is a wired-to-wireless bridge. No routing there, can't work as Router.
