More than two OpenVPN servers? (AC87)

I'm looking to decom my pfsense router and promote my AC87 from access point to primary router. I have three OpenVPN servers set up - two point to points (to remote AC56 and AC68 running Asuswrt-Merlin) and one that I use for client access. It looks to me that there is no way to run more than two OpenVPN server instances, is there any way around that to run more than two?

The reason I want to run three separate instances is that I want to keep the two point to points on individual subnets (either their own) and then have the roaming access/client access setup independent.

Any thoughts appreciated.
