what kind of CPU and distro for cheap Linux software RAID 6?

I am thinking about upgrading my NAS, currently a DS211j, so I can handle full disk backups for all the household computers. My target is something like 6 drives at least 2 TB each.

I am thinking of something like an Atom or E series MB with as many SATA ports as possible. Maybe something like an E35M1-I. An i3 would be a huge performance boost for about $50, but if it is not a big improvement in NAS performance I would rather not.

My questions are, will something like an e350 be powerful enough for this purpose and what Linux distro is the easiest to setup and maintain for this purpose.

I would also like to know how hard it would be to expand the RAID in the future.
