WHS or Server 2K3?

I have the option to load either to create my first home media/storage server. Will use for those things as well as whatever else kind of fun and interesting things I can find to do with it. Have looked on the net, but thought I would get the opinion of the experts on here what you think is better to use/load? I can use and run which ever so it isn't a matter of what the user can figure out. Although I have played with 2k3 more than WHS. Only concern I have with WHS is if I should concern myself with the fact that it combines all drives/storage into one? Especially if on my desktop I have always been used to using folders for organizing things. Thanks much for the input!
 
WHS and it's core element for disk management is now an abandoned product at Microsoft. So beware of it's orphaned status and lack of future support.

Some of us use XP and backup on-going automation such as SecondCopy, Acronis, etc. Win 7 would do as well.
 
The new WHS product is Windows Home Server 2011.

There is also Windows Small Business Server 2011. But the Windows Server product is Server 2008 R2.
 
With a new WHS, what's the replacement / equivalent of WHS' drive extender software?
