Just enabling QoS has been working great, but I would really like to know which applications Asus/Trend is classifying by policy? and How Work from home vs Learn From home differ. I've searched but have not been able to find any definitions.

The reason to keep Learn-From-Home at or near the bottom of the priority list is because there is nothing unique in it.
Learn-From-Home = Streaming + Web services (part of Web Surfing)
So if you set Learn-From-Home at a higher priority than Streaming, you'll be confused why Netflix is showing up in the Learn-From-Home category instead of Streaming. But when Streaming is higher priority than Learn-From-Home, everything is fine.
The same goes for some Web Surfing applications. As long as Streaming and Web Surfing are higher priority than Learn-From-Home, traffic will get prioritized how you would expect it to, without surprises.
And since there is nothing else remaining in Learn-From-Home except Streaming and Web Surfing, it really serves no purpose and may as well be at the bottom of the priority list.
