I have a AX86U Pro configured with Smart Connect, is it possible to pin certain devices to specific bands (5G, 2.4G) to stop them potentially being shunted between the two, or is the only way to turn off Smart Connect and configure each band individually?

Sure. Use MAC filter and deny access to a band.

However, if you are pushing 160 MHz and the client is blocked from the 2.4 GHz band and the 5 GHz gets hit by RADAR that client will loose connection. Better to let the router and clients decide which band to connect to.
