I have a ASUS RT-AX86U and RT-AX57. I have set up a wireless AiMesh network, with the AX86U being the main router. Ever since I created the AiMesh Network, I would find my mobile device (Samsung S21 Ultra) to occasionally have a slow Wi-Fi connection to the network. By this I mean the speed would be a maximum of 20mbps (sometimes only a few mbps) on a 500mbps connection. This would typically be after I returned home and my device reconnecting to the network. I usually have to disconnect and reconnect my device several times to the Wi-Fi for me to get back to normal speeds. I have reset and recreated the AiMesh network several times, disabled Roaming Assistant in the router settings, but have still found the issue to persist.

I would appreciate any help on trying to get this issue resolved.

The only reliable method I found is to not connect the RT-AX58U to any network I want to be responsive.

Sounds like the phone connects to the mesh node and the node backhaul has switched to the 2.4 GHz band. Solution would be to connect the node with Ethernet or move it closer to the router. Then again it could be a phone issue.
