I currently have Buffalo AV-500 adapters with gigabit ports. At best I am getting 80Mbps but I want something faster. Is it worth waiting for AV2-1000 MIMO adapters or should I just bite the bullet and put in Cat6 everywhere?

Cat6 hands down for cost, speed and dependability. Every other type of connection should be used for convenience only where you don't need maximum speed.
