Default gateway setup

I was wondering about setting up a qnap nas as openvpn client for my devices on my LAN and it got me thinking about the part where one has to direct the devices to the nas by using it as default gateway and remembered the option in LAN -> DHCP-server -> Basic config where it lets one define a default gateway. Could i use this to redirect all the devices to my nas and from that through the vpn?
Another thing which I then thought of. If this is possible will the route then be:
end-device -> Router -> NAS -> vpn -> router -> wan ? or is this totally wrong?
