I set up 3 OpenVPN clients, but ended up using the WireGuard clients I set up. Now I cannot see where to delete these clients. Using RT-BE58 Go with 3006.102.7. Any tips much appreciated, I've stared at this for too long.

Do you have the "Default" button at the bottom of that page?
AS @ColinTaylor indicated there is a Default button at the bottom of the OpenVPN Client section. Selecting that should reset the settings back to default/blank. Example from 3006.102.7 on a RT-AX86U Pro:
