Just noticed DNS Privacy Protocol

I've just spotted this in my router's GUI and wondered if I should enable it. Also, if I do, will it interefere with any of the amtm-installed scripts? I use OpenDNS rather than my ISP's DNS servers.

No, because if you like OpenDNS, they do not support the DNS-over-TLS (DoT) protocol that underlies the DNS Privacy feature in Merlin. Once you enable it, you choose different DNS servers to communicate with securely. OpenDNS isn't possible.
