NAS O/S for a 64 bit environment?

I'm finally getting ready (those darn kids, always wanting food!) to put together a home NAS system. My machines are the following:

  • HP workhorse PC: Vista 64 bit
  • HP family PC: Vista 64 bit
  • Toshiba laptop: Vista 64 bit
  • Gateway media center PC: XP Pro MCE2005
  • Intel-based server running Windows Server 2003 R2

Currently, most of the shared files are on the server, which also is a web and FTP host (overworked, yes I know). I want to move all the shared files onto the NAS. Given that I am almost completely 64 bit, is there a specific OS or hardware configuration I should look to or avoid?
 
I have no experience with 64 bit client OSes. But I don't think it matters for the NAS that you choose.
