Is there a way to save my current config on my RT-AC66 and view it in a text editor of some type?

Yes,

Administration -> Restore/Save/Upload Setting
Save your config and open it with WRT Settings afterwards.

Or, export a text-based version of it to a plugged USB disk. Through SSH:

nvram show | sort > /mnt/sda1/settings.txt

Adjust the path to the location of your USB disk.
