I am using merlin 3.0.0.4.374.33 and I can not disable Upnp. When I go to disable it and click apply, I the processing screen and it goes on and on and on for several minutes. I have cleared the nvram and reinstalled the stock asus firmware and no luck. Even with asus stock firmware, I can't disable upnp.

That sounds odd, specially if all other configuration settings do not have issues.
Anyway I suggest to try another browser and make sure the brower does allow execution of scripts for the router address (e.g. Firefox, with NoScript add-on, can be configured such that you cannot properly configure the router).
In Internet Explorer "Compatibility Mode" may play up for you.
