Will 2 ASUS RT-AC66U B1 Wireless-AC1750 Dual-Band Gigabit Router work well together ?

Yes!
The AC66U_B1 is basically an AC68U in a different package. I have an AC66U_B1 as a main router in a small office with two AC68U AiMesh nodes. Works very well on a 300/35 connection.
