It was discovered long after Cat5 was spec'd that Gig ENet would only work with Cat5 cables shorter than about 90 meters or so. So Cat5e was developed which modified some of the specifications of Cat5 to allow Gig E at lengths up to 100m.
So unless you have runs in your house longer than 90M I'd just do 4 wire terminations and run at Gig speeds.
Now there may be other reason you may not get Gig E speeds but Cat5 at less than about 90m in general should be fine. (Wrapping cable around steel pipe and things like that can cause speed issues no matter what the Cat rating.)
