I'm setting up my 5GHz wifi to use 80MHz for use with AC client, and I'm wondering which way does channel extension happen i.e. if I set my control channel to 60, what range of channels would actually be used to total 80MHz?

Probably depends on the (closed source) parts of the firmware.

AFAIK, 802.11ac does not define two channels. Rather, it defines a central channel, and you will use 80 MHz of bandwidth centered on that channel.
