AX86U changing pre-selected channel automatically?

I chose 116 as my channel on this router and everything was working well on that channel for a long time. When I checked today, the channel had jumped to 104, and I was unable to reconnect to 116. When I check my router settings it still has 116 selected, but both Windows and WiFi Analyzer tells me it switched to 104.

Why did that happen when it's not set to auto?
 
Because its a DFS channel. The router is detecting radar and switching channels. That's how it works and is normal.
 
Yes, possible.

It may not have switched directly to that other DFS channel. There may have been multiple jumps between the times you noticed it.

Will I have to worry about this on the 6 Ghz band when Wifi 6E is here?
 
There are no DFS channels on Wi-Fi 6E. The exact reason 6E is becoming available, I suspect. :)
