bypass or workaround for crappy isp router help

Greetings!

Long time on and off reader here on SNB, first time poster. I have a problem with my network on a second home I setup. There is only one choice for an ISP, and it uses a canopy device with a simcard in it and connects to their supplied router, which has most settings locked, even dhcp server option. I read also that the antenna that receives the internet signal can only be powered by their router and I tried using mine and it didnt work. Even using my cat6 cables that I laid on the wiring system of the house didn't work with their router.
My original plan was just use the provided modem/router and connect it to the wan port of a main router of my choice and go from there. But since I have to use the crappy isp router, I am unsure how to go about it. Given that I can't change most settings on the router save for the ssid and passwords, can I setup my other routers and make one a dhcp server also? I wanted to have a gigabit network also, I don't think the crappy router has gigabit lan ports. Also, not sure if there is any validity that the stock router can only take 5 connections at once, I haven't confirmed this though.
Any ideas or tips would be appreciated. Thanks!
