Possible to do dhcp reservation on guest networks either on merlin or stock firmware?

Is this something that is achievable? Maybe my search skills are lacking but I was not able to find an answer to this

Use guest network 2, 3, or 4 (if available).

No issues assigning ip addresses to my YazFi guest clients. Did a post on it here:

YazFi doesn't work on Aimesh nodes.

If you don't want to use Yaz as discussed below, you can create a dnsmasq.postconf script to add them (requires merlin).
