Is the graphing library used in the UI sophisticated enough to handle longer datasets, e.g., will it add scrollbars or have multiple pages instead of cramming it all in one page?

No, lots of it is hard-coded. You change, you break it. This would have to be changed upstream by Asus. Look at vnstat as a user-customisable alternative.

There's also other factors, such as memory usage, the time needed to generate/process the data by both the daemon and the webui, etc...

While it could safely be increased these days (rstats was initially written back in the WRT54G days or around that), it's not a simple process indeed.
