Quick question: are there different / more security features or settings in Merlin as opposed to official firmware?

No. Sometimes Merlin patches issues before Asus and sometimes Asus is ahead of Merlin with security updates and patches just depends on timing.

There are a few security tweaks/hardening that I have implemented that's not present in the stock firmware, like some daemons running with reduced privileges, but nothing major.

Yes, but generally Asus eventually also updates these, just that I am generally more proactive than them with these component updates.
