I read that WHS 2011, eval/trial, is not possible from Microsoft, due to "licensing issues" with codecs in WHS.

This website

says they have a demo on line to try, but they would push software on to my PC and I consider that risky.

I am curious about WHS 2011 but not enough to buy it. Maybe without drive extender, this 2011 version is unappealing.

If you have access to MSDN or technet grab a copy and try it out.
Running at the moment, with drive bender can't really fault it so far, compared to the beta from last year.

One thing that annoys me is the limitation on the backup sizes.

IIRC, those are rather expensive subscriptions. (I don't have access via employer or some such).

Technet Standard only costs $199, or $149 renewal, for anyone. You can put Windows 7 or Server on all your computers with it. You can also download Office and certain other applications. If you have more than one computer, it's a great choice.

they let multiple MS Office's run like this?

Hmm, I had a developer license years ago and I thought it was like $500/yr.
