Looking for advice handling heavy traffic

Hi!
I'm sure this has been asked before, so please feel free to point me in the right direction.

What I have:
1 gaming computer
1 HTPC/NAS/PLEX/torrent server with a 4 port Intel Gbit NIC, Windows 10. Pretty big usage spikes
Asus RT-AC87U, currently using adaptive QoS
Gbit fiber

What I'm looking for:
Minimal delay on the gaming computer while handling 2k+ connections (maybe 50 active) and 10Mbit-1Gbit throughput on the server. Low delay more important than throughput. WiFi isn't a priority. I can't say that I have any noticeable problems right now, but you know how it is. Don't want any ping spikes, congested packets or warping enemies when I'm trying to clutch a CS:GO round.

Questions:
Is there something I can buy that will give me any worthwhile benefits over the AC87U?
Using the server as router is an alternative, but I don't know if the latency is better or worse than a dedicated "hardware accelerated" router?

Your opinions appreciated, thanks!

I would ditch QoS.
My Asus RT-AC68U acts as a glorified Access Point at the moment.
Build a custom x86 router with a decent distro like IPFire and you will forget about ping spikes.

Have you looked at Ubiquiti or Mikrotik routers as a comparison (I'm assuming all those connections are WAN not LAN)? They'll be harder to set up than the ASUS (esp. Mikrotik!), but they are much more flexible and configurable - if you're finding the ASUS potentially lacking.
