What should it be on for each respective band? It's currently disabled for 2.4Ghz and DL OFDMA only for 5Ghz (I set it to DL/UL OFDMA + MU-MIMO previously but I am not sure if that's correct ). The majority of traffic is gaming, streaming, and browsing if that's important.

The settings matter only if you have more than one AX device.
There is no right answer; you need to experiment.

OFDMA is in early days and will be for at least another year. I tried to find the advertised advantages of higher total throughput and lower latency for about a year and could not see them.

Qualcomm's latest white paper basically says you need a LOT of AX STAs with heavy traffic to see any OFDMA advantage.

Just leave the defaults and get on with life unless you see throughput or compatibility problems.
