Confused by AC3100 Adaptive QOS

I just installed my first ASUS router (AC3100) and I'm a little confused by adaptive QOS. I'm running the ASUS firmware.

As I understand it, adaptive QOS broadly classifies activity, you prioritize the categories and the router builds rules off of that.

In the Bandwith Monitor you can drag priority labels onto devices. How does that affect adaptive QOS and the priority category mechanism it uses?

I have a 10/100 connection and I'm using Backblaze which uses SSL/TLS to transmit the data. A backup speed above 2MB (only 20% of my upload max ) blows out my Ooma VOIP. People can't hear me, but I can hear them. I tried traditional QOS and giving highest priority to Ooma ports but that didn't help. I tried setting the priority of the Mac running Backblaze to lowest and that didn't helped. I'm really stumped here.
