Have to constantly reboot RT-AC68U

I have been struggling with this - why do I have to nearly daily reboot my RT-AC68U?

* I have Merlin's 380.62 firmware.
* I actually don't use the radio's on the router (radios off)
* I have an OpenVPN server setup for when I am out and about and want to have security
* I have about 34 household clients: Wemo/Sonos/laptops/ipads/iphones
* I have 5 Unifi AC Pro access points cat 6 wired through a Netgear switch & 2 TP link switches (all setup as unmanaged)

I have had the router for 1 month as I use my RT-N66U for a VPN client for geoblocking (on its own subnet)

But I notice after a day or two that my network slows down. When I log in using http the router response is sluggish. Once I reboot its all hunky dory again for 1 to 2 days.

Any ideas?

Why haven't you tried the latest stable release 380.62_1?

You may have to do a full reset to factory defaults followed by a minimal and manual configuration of the router to secure it and connect to your ISP if the issues continue. (The following links may help get your router to a good/known state for further troubleshooting without going on wild goose chases).
