It's been noted already. Someone surmised it was removed to cut down on service calls to ASUS. Also, that those functions were broken and superfluous, so no longer needed.
Is this a step backwards?

Some of those settings did not make sense to be together. You'll either want 802.11ax MU-MIMO or 802.11be MU-MIMO, 802.11ax OFDMA or 802.11be OFDMA. So toggling WiFi 7 on or off makes more sense. (Unless my understanding is incorrect)....

It's becoming a normal thing with consumer tech these days. The less things we can mess with the less likely we are to get things wrong, and the less likely we'll need tech support.
That, and the fact that most of those settings are ax only and not relevant to wifi 7 routers. No-one's going to buy a wifi 7 router and disable wifi 7 to only use WiFi 6 features, or so they think.
Strictly my thoughts.

I did just that.... only wanted the 10/2.5g ports on the BE88U and couldnt care less about wifi 7 so i just configured the router as wifi 6 ... im special i guess ahahah
