Just checking in to see if you had any developments for us! :)
Sorry. Yes reboots stopped after I uninstalled. I need to reinstall it again and change the cron to reboot at 1:00am instead of 12:00 to see if that fixes it.

Also after thinking it over, setting it at 1am is probably not as good as setting it to a specific minute, like 1:12am

Since "1:00am" would also clash with your Skynet cron job I mentioned here:
  • 0 * * * * sh /jffs/scripts/firewall save
    Runs at the top of every hour, including 00:00 (midnight)

I set it for 1:15am and it seeed to have worked fine. I did end up uninstalling it for now though. I tend to check these forums constantly and update my router by hand everytime anyway, so have decided to leave it uninstalled.

MerlinAU is a safer way to update even if you have auto update disabled and kick off the update manually.

As @visortgw mentioned, it's the better way to update usually, even if you disable the "Auto" feature and kick it off manually everytime.
The exception to that is unless you manually go through all the same steps like unmounting your USB, unloading cron jobs. Checking the firmware file hash. Etc.

Additionally, just because it seemed to work, I wouldn't call that case closed immediately.
We should try to further identify what caused your crashes initially. Was it MerlinAU at all? Was it a cron job collision?

If you moved your cron job back to midnight does it start crashing again?
That would indicate it likely is a from cron job collision, which we should investigate if that really is the cause.
